Sam and I made some veggie muffins last weekend. They were really easy to make, and Sam likes them! He doesn't care for many veggies, so anyway to get Sam to eat them is a plus for me.

Recipe:
I used the food processor to chop up a whole peeled zuchinni and large carrot.
Mix together 1/4 cup canola oil and 1/2 cup brown sugar
Add an egg, 3/4 cup applesauce, and the chopped up veggies
Combine 1 cup of flour, 3/4 cup whole wheat flour, 1 tsp cinnamon, and 1/2 teaspoon of nutmeg
Mix all ingredients together and pour the batter into muffin cups
Bake for about 20 minutes at 400 degrees
